Pecan Supremes

2 cups     flour - all purpose
1/2 tsp     baking soda
1/4 tsp     salt
3/4 cups  quick oats
3/4 cups  dark brown sugar, packed
3/4 cups  white sugar
1 cup       salted butter, softened
2             large eggs
2 tsp       pure vanilla
1 cup      chopped pecans or walnuts
1 cup     semi-sweet chocolate chips

Preheat oven to 300°.  In a medium bowl combine flour, soda, salt and oats.  Mix well with wire whisk and set aside.

In a large bowl blend sugars with an electric mixer at medium speed. Add butter and mix to form grainy paste.  Scrape down sides of bowl, then add eggs and vanilla.  Beat at medium speed until light and fluffy.

Add the flour mixture, pecans and chocolate chips and blend at low speed just until combined.  Do not over mix.

Drop dough by rounded tablespoons onto ungreased cookie sheet.  1-1/2" apart.  Bake for 20-22 minutes.  Immediately transfer cookes with a spatula to a cool, flat surface.  Yield 3 dozen.
