Baked Oatmeal

1½ cups oatmeal (quick or old-fashioned),
triticale, or six-grain rolled cereal
2 Tbsp. flax meal
¼ cup white sugar
¼ cup brown sugar
1 tsp. baking powder
½ tsp. salt
½ tsp. cinnamon
¼ cup butter, melted
½ cup milk
1 egg
1½ tsp. vanilla
Stir together oatmeal, flax, sugars, baking powder, salt, and cinnamon. Add butter, milk, egg, and vanilla. Mix with a whisk until well blended. Spread in a 9 x 9-inch baking dish that has been greased with no-stick cooking spray. 
Bake at 350o for 20-25 minutes or until edges are golden brown. Cut into squares. Serve warm topped with fresh fruit and vanilla yogurt, cinnamon syrup, or dollop of sweet maple sour cream.

Variations:
Baked Oatmeal with Apples: 
Wash, core, and thinly slice a large golden delicious apple (or other baking apple). Place slices on the bottom of a 9 x 9-inch baking dish that has been greased with no-stick cooking spray. Gently spoon the oatmeal mixture over the apples and spread evenly. Bake at 350o for 20-25 minutes or until edges are golden brown. Serve with warm cinnamon syrup.
