Cranberry-Cheese Coffee Cake

(Yummy for Christmas time breakfast)

Mix together:
7-1/2 to 8 cups flour
2/3 cup sugar
2 tsp salt
2 Tbsp yeast
2/3 cup margarine
1 cup milk
1 cup water

Heat mixture, milk, and water to about 125°-130°.  Stir in 1/2 of the flour mixture. 

Add:
2 eggs - Beat until smooth ~ 2 minutes

Add remaining flour mixture.  To make dough easy to handle, mix for 3 to 5 minutes.  Turn out on floured surface - cover and let rest for 10 minutes.  Grease 4 round pie pans.

Mix:
2 cans whole cranberry sauce
2 tsp almond extract

Divide dough in fourths.  Roll to approx. 15" circle.  Put in pan with dough hanging over edges.

Cream Cheese filling:
2 - 8 oz pkgs cream cheese
1/2 cup sugar
6 Tbsp flour
2 egg yolks (save whites)

Put cream cheese filling in bottom of pan, with cranberries on top.  Make 1" cuts in dough and fold and twist towards center of pan.  Beat egg whites until foamy, brush on top of dough.  Let rise 45 min.  Bake 375° for 30-35 minutes.

Makes 4 cakes
