Crumble Topping:
1/3 cup chopped walnuts
¼ cup brown sugar
¼ cup melted butter
1/3 cup Kamut flour
In a small bowl mix topping ingredients together. Set aside.
Muffins:
1½ cups Kamut flour
½ cup oat flour
1 tsp. salt
2 Tbsp. baking powder
1 tsp. cinnamon
¾ cup buttermilk
2 beaten eggs
½ cup honey
¼ cup melted butter
½ cup vegetable oil (or substitute applesauce to lower the fat)
1 cup raisins,
optional (½ cup chocolate chips is a yummy substitute)
In a large mixing bowl, stir together dry ingredients. Add oil, eggs, honey and buttermilk. Stir well. Fold in raisins (or chocolate chips). Line muffin tins with 18 baking cups or grease well. Fill 2/3 full with batter. Sprinkle one tablespoon of topping on each muffin.
Bake at 350o for 15-18 minutes. Muffins are done when a toothpick inserted in center comes out clean. Be careful not to overcook or muffins will be dry and crumbly.
